Mix Forest (Porcini, Bolets, Pleurotus, Black Fungus)

160g arborio rice

12g Vegetable Bouillon Premium (Art. 43952)

15g Truffle Paste (Art. 55127)

4g Garlic Paste (Art. 55014)

20g Mix Forest (Art. 20057)

700ml water (for the bouillon)

30ml white wine

50g shimeji mushrooms

50g onion chopped

10g olive oil

30g butter

50g parmesan


Black pepper

  1. In a saucepan, prepare the Vegetable Bouillon, and keep warm.
  2. In a deep pan, heat the olive oil, sauté the onion, add the Garlic Paste, the shimeji mushrooms, the Mix Forest and sauté until golden.
  3. Add the rice and continue sautéing until translucent.
  4. Pour the wine and stir until the alcohol evaporates.
  5. Add some of the hot bouillon and continue stirring until absorbed. (Allow each quantity to be absorbed before adding the next).
  6. Once the rice is ready, add the Truffle Paste.
  7. Remove from heat, add the butter and parmesan and continue stirring.
  8. Add salt and freshly ground pepper and serve.
