Spicy sausages with cheese

YOU WILL NEED

Chorizo Sausage

Mexico

MATERIALS

1,4kg pork shoulder

600g lard

60g Seasoning for Chorizo Sausages (Art. 37007 CL)

150g Mexico Sauce (Art. 55027)

100g kefalotyri in cubes

Pork intestine

IMPLEMENTATION

  1. Push the meat and the lard through the meat grinder in a tray of 6-8mm.
  2. Mix the Mexico Sauce with the Seasoning for Chorizo Sausages.
  3. Place the meat mass in the kneading machine and add the mix of the sauce and the Seasoning.
  4. Knead until the ingredients are evenly mixed and then fill in the intestine with the filler.
  5. Leave them hanging to dehydrate.
